
Today I took a pasta making class at "Vecchia Scuola Bolognese." This is one serious school and not for the faint of heart. If you make a mistake you are going to hear about it. It is sort of like boot camp so you have to go with it and not take it personally if you are reprimanded:-) That being said, I loved my teacher Sabrina who also gave praise...at least to me. LOL.
There were four Italians that spoke no English, and two of us that spoke no Italian and yet she managed to spend time with everyone. And everyone there was a serious student taking 6 weeks or more of classes. I was the only "tourist."
No lecture was given beforehand. You learned by DOING...immediately. I now have a new appreciation for hand made pasta. This is a true craft. The flour you choose, the way you knead the dough, the way you roll the dough with a rolling pin, and make the shapes is a very intricate process with many pitfalls along the way.
Also, required is a good memory. My memory sucks but if I have to remember something under pressure I can do it if I furrow my brow and repeat the instructions to myself under my breath, and sweat a lot. Heh.
This school is very passionate about what they do. Craft is very important and agile fingers are very helpful in forming the shapes. I must say folding origami is easier than folding pasta however.
After 3 and a half hours I was shown to "my table" for a sit down meal. I was disappointed that my classmates could not join me. Since they were long term students they had to eat standing up in the pasta making room. At my table I was served mortadella and salami with flat bread, a pasta soup, and two other pasta dishes (I did not catch the names of these dishes.) I was also served water "con gaz" and a fabulous red wine that I hardly drank. (I was so scared of getting tipsy I only had a few sips.) The wine was fabulous and dear Sabrina snuck the whole bottle out to me so I could take it home.
The name of the wine was colli bolognesi - I cappucci (cabernet sauvvignon 2010.)
Unfortunately my cab arrived on time so I could not eat all of this sitting down. They were kind enough to wrap it up for me and even gave me some of their dinnerware (a metal fork and spoon.)
I would hardily recommend this course if you are seriously interested in making pasta. This is not a "fluffy" tourist class by any means :-)
